I'm continuing the berry theme this week with Mulberries! A berry I rarely see in the supermarket, but since I did, I had to try of course. I thought about a making a mulberry smoothie, then thought about adding them to a banana bread mix, but decided they would work perfectly as compote for a mini panna cotta dessert. Panna cotta is an Italian creamy dessert simply made by simmering cream, milk and sugar together and then adding gelatine so it sets firm in the fridge. Once set, I added a spoonful of berry compote to each, sprinkled some finely crushed roasted pistachios and walnuts and added a fresh mulberry on top. You don't have to be a pastry chef to make these! I've added an easy recipe below.
