Trying out another pear dessert this week - cute baby peaches poached in a sugar syrup with a mix of my favourite spices; cardamon, cinnamon, nutmeg and aniseed. To add texture, I roasted almond flakes in the oven and made a caramel mixture over the stove top. Then carefully combined the two and spread out on a baking tray to make an almond brittle. Working quickly and carefully, I cut the brittle into squares and moulded each into a bowl like shape that I could serve a poached pear with a scoop of vanilla ice-cream in. This dessert gives an almighty sugar hit…for sweet tooth's only!
