Baklava is very sweet tasting pastry that is made from roasted pistachios and walnuts doused in honey, rose and orange blossom syrup, sandwiched between layers of filo pastry. Baked by a variety cuisines including Turkish and Greek, this is a pastry that makes my mouth water just thinking about it!
As a certain person's birthday was on the horizon, someone who finds baklava irresistible and as I always bake a cake for the occasion, I decided to combine the two and bake the world's first baklava cake! After some research on the web, I soon found I wasn't the only one who had thought of this combination, so after some careful recipe making and planning, I set out on baking my own version of a baklava birthday cake. The result? One very sticky, sweet cake made up of two pistachio meal cake layers with a baklava layer in between. I drizzled white chocolate ganache over the top, but if I were to make it again, I would make a cream cheese filling for in between each layer instead. To decorate, I used flaked pieces filo pastry, extra roasted pistachios and these cute baby figs (bought in a jar) I found in my local deli that had been marinated in a saffron and pear syrup…this cake is definitely one for the sweet tooth's!
